VINEYARD: 17ha property, situated to the south-east of Cairanne

GRAPE VARIETIES: Grenache, Syrah, Mourvèdre, Carignan

AGE: 35-50 years old

TERROIR: chalky-clay with pudding stones

PRODUCTION: 35-40 hl/ha

HARVESTING: hand-harvested with rigorous selection

VINIFICATION: traditional without the use of cultured yeast; temperature-controlled; pumping over; long maceration; micro-oxygenation; one third raised in oak barrels

CONSERVATION: this wine starts to drink well after a year, but will benefit from being cellared for several years to enhance its typical characteristics

TASTING NOTE: a very “Syrah” nose, redolent of violets; on the palette it is round and bursting with red fruits; this wine will benefit from an hour in a carafe before serving

SERVE WITH: all red meats, game and hard cheeses
