VINEYARD: north of Orange

GRAPE VARIETIES: Syrah, Grenache, Cinsault

AGE: 30 years old

TERROIR: well-exposed slopes; sandy surface with clayey sub-soil, which helps to prevent drought stress

PRODUCTION: 35 – 40 hl/ha

VINIFICATION: bleeding after 2 / 3 hours of skin contact; inoculation with cultured yeasts; long fermentation at low temperatures (10 to 12°C); malolactic fermentation blocked

CONSERVATION: best drunk within 12 months of bottling

TASTING NOTE: the nose is redolent of boiled sweets; on the pallet there are red berry fruits and violets with an excellent balance of fruit and acidity

SERVE WITH: fruity and refreshing, this wine is perfect as an aperitif, but goes well with charcuterie and kebabs
