TERROIR: sandy surface with clayey sub-soil, which helps to prevent drought stress

PRODUCTION: 35 hl/ha

VINIFICATION: short maceration; pressed gently in pneumatic press; addition of cultured yeasts; long fermentation at very low temperatures; ageing on fine lees until December; malolactic fermentation blocked

CONSERVATION: drink within 24 months of bottling

TASTING NOTE: the pale green colour turns golden after a few months; the nose is fruity with overtones of banana, exotic fruits and grapefruit

SERVE WITH: excellent both as an aperitif and as an accompaniment to seafood, fish and shellfish
